Baked Coconut Cod

INGREDIENTS 1 (13.5-oz) can coconut milk 2 tbsp fresh lime juice 2 tbsp olive oil Salt and freshly ground black pepper 4 cod (or lean, flaky white fish) fillets 1 jalapeno, stemmed and thinly sliced lengthwise METHOD Preheat the oven to 400.
